This work deals with the analysis of animal health by treating all matters and aspects that integrate ir, as well as food safety in products from animals.
Its review is justified by two fundamental reasons: first, for the self-interest that the book raises, being one of the few studies on animal health that exist so far, and this despite the abundant community, state and regional regulations and the different agencies with competences on the matter; and on the other hand, due to the social alarm that originated with Transmissible Spongiform Encephalopathy (TSE), known as "mad cow disease", being a disease transmissible to man (zoonosis).
